We have done this before. Create a project file and use Powerpoints
hyperlink to link a keyword like 'Start Animation' to the projector
file. The only drawback is that if you are creating a generic
powerpoint for users of both mac and pc, you will need to create two
different projectors and two hyperlinks. But it sounds like in your
case, you know who will be using these so you can get by with only
one.
